Chef Vince Dayao is the culinary mastermind behind the operation along with mixologist and brother Paolo Dayao and partner Joseph Alcasabas. Vince’s five course Korean-inspired Filipino presentation reflects the melting pot of inspiration emerging from the  third-wave Filipino food movement.  


Setting

Dine in a secret pop-up art gallery in an UNDSCVRD location of SOMA Pilipinas.

Appetizers

  • Macaroni Salad - Pineapple, Relish, Mayo

  • Atchara - Daikon, Gochugaru

  • Cucumbers - Chili Oil, Black Pepper

  • First Course: romaine salad - cucumbers, long beans, garlic roasted peanuts, gochujang vinaigrette

  • Second Course: crispy mung bean - chives, soy mayo, scallions

  • Third Course: binagoongang - fermented shrimp, chili, frisee, lemon

  • Fourth Course: kare kare - oxtail, rice cake, garlic short grain rice, cilantro

  • Fifth Course: sabaw - pork/chicken broth, kimchi, tofu


    Dessert

  • roasted barley, shave ice, coconut, rice crispy
