About the Dish:

Pancit Malabon

is a noodle dish originating from Malabon, Metro Manila, Philippines. It uses thick rice noodles, achuete (annatto seeds), shrimp broth, patis, and various seafoods for flavor and garnish.

In collaboration with our non-profit partner SOMCAN, Balay (Home) Cooking showcases a new chef every month to feature a healthy filipino dish you can recreate at home. All classes will be streamed live from our Balay Streaming Hub.

Ingredients List

Pancit Base

  • Rice noodles

  • Cooking oil

Seafood Medley:

  • 1/4lb Shrimp

  • 1/4lb Squid

  • 1/4lb Pork

  • 6 Mussels

Sauce:

  • 1 Tbsp Achuete / Annatto oil

  • 4 Tbsp Crab fat

  • 1/2 c Onions

  • 4 Tbsp Garlic

  • 1-2 tsp Salt & pepper

Additional Toppings:

  • 1/2c Chicharron

  • 3 Tbsp Green onions

  • 2 Boiled egg

  • 2Tbsp Fried garlic

Chef Charleen

Chef Charleen is a culinary creative, and cannapreneur. She is the first Filipino American to win Food Network’s Chopped in 2016. A reality tv gem, she has also competed on The Cooking Channel’s Farmer’s Market Flip, and more recently on Food Network's Supermarket Stakeout in 2021. As one of the CoFounders of The People's Ecosystem, Chef Charleen has been actively advocating for the legalization of cannabis, and striving for a more inclusive and equitable industry. In the kitchen, Chef Charleen has been working on food projects, such as her own cannabis edible line which is soon to launch this year, and a work in progress cookbook. With both worlds colliding you just might get a mouth watering elevated experience!
